  • 1 pound chicken thighs, cut into small pieces

  • 4 garlic cloves, minced

  1. Heat 1 tablespoon of olive oil in a large paella pan or skillet over medium heat.
  2. Add the chicken and cook until browned, about 5-7 minutes. Remove the chicken from the pan and set aside.
  3. Add the seafood to the pan and cook until just cooked through, about 2-3 minutes. Remove the seafood from the pan and set aside.
  4. Add a little more olive oil to the pan, if needed, and sauté the onion, garlic, and bell peppers until softened, about 5 minutes.
  5. Stir in the rice and cook for 2-3 minutes, until lightly toasted.
  6. Add the diced tomatoes, chicken broth, saffron threads, and smoked paprika to the pan. Stir well to combine.
  7. Add the cooked chicken and seafood back to the pan and stir to distribute evenly.
