  1. In a large bowl, mix together the chicken, yogurt, and half of the sliced onions. Set aside to marinate for at least 30 minutes.
  2. In a large pot or Dutch oven, heat the ghee or oil over medium heat. Add the remaining onions and cook until golden brown.
  3. Add the cumin seeds, cinnamon stick, cardamom pods, cloves, and bay leaf, and cook for 1-2 minutes, until fragrant.
  4. Add the chopped tomatoes and cook until they break down and form a thick sauce.
  5. Add the turmeric, red chili powder, coriander powder, garam masala, and salt, and stir to combine.
  6. Add the marinated chicken and cook for 5-7 minutes, until browned on all sides.
  7. Add the soaked rice and stir to combine.
  8. Add 2 cups of water and bring to a boil.
  9. Lower the heat and cover the pot. Cook for 20-25 minutes, until the rice, is tender and the chicken is cooked through.
