  • उत्तपम बनाने की क्या विधि है?

    उत्तपम –
    आवश्यक सामग्री –
    मोटा (सस्ता) चावल – 100 ग्राम
    बिना छिलके वाली उडद दाल – 50 ग्राम
    रिफाइंड तेल – 2 बडे चम्मच
    प्याज 1 – मीडियम, पतला लंबा कटा
    टमाटर – 1 मीडियम, पतला लंबा कटा
    हरी मिर्च – 2, बारीक कटी
    हरा धनिया – 5/6 स्टिक, मोटा कटा
    करी पत्ते – 10/12 बारीक कटे
    नमक – स्वादानुसार
    विधी –
    100 ग्राम चावल व 50 ग्राम बिना छिलके वाली उडद दाल दोपहर मे धो कर आधा लिटर पानी मे अलग अलग फुला दें। उसे रात को बारीक पीस लें, पीसते समय दाल वाला पानी ही इस्तेमाल करें।
    सुबह तक इस मिश्रण मे खमीर आ जाएगा। इस मिश्रण मे स्वादानुसार नमक मिला लें। अगर अधिक गाढा हो तो थोडा पानी मिला लें।
    (यह दोसे का बेसिक बैटर है, आप इससे दोसा, इडली, आंध्र का डब्बा दोसा व अप्पम भी बना सकते हैं।)
    उत्तपम बनाना प्रारंभ करें।
    एक फ्लैट नानस्टिक तवा (जिस पर दोसा बनाते हैं) गैस पर मीडियम आंच पर रखें। जब वह गर्म हो जाऐ उस पर चौथाई चम्मच तेल डाल कर फैलाऐं व थोडे पानी के छींटे मारें। इससे वह चारों ओर से एक जैसा गर्म हो जाऐगा।
    अब उस पर एक मीडियम कटोरी बैटर डालें व कटोरी के तले से मोटा फैलाऐं, करीब 7/8 इंच गोलाई मे। उस पर थोडी प्याज, टमाटर, मिर्च, धनिया व करी पत्ता फैलाऐं। वह बैटर के ऊपरी गीले हिस्से पर चिपक जाऐगा।
    करीब 2/3 मिनट बाद उसे पलट कर 3/4 मिनट सेंक लें।
    आपका उत्तपम तैयार है, इसे दोसे वाली नारियल की चटनी के साथ सर्व करें, खाऐं व खिलाऐं।
