  • 6 egg yolks
  • 3/4 cup granulated sugar

  • 24-30 ladyfingers

  1. In a heatproof bowl, whisk together the egg yolks and sugar until pale and thick.
  2. Place the bowl over a pot of simmering water, making sure the bottom of the bowl is not touching the water.
  3. Whisk the egg yolk mixture constantly for 6-8 minutes, until it thickens and doubles in volume.
  4. Remove the bowl from the heat and let it cool to room temperature.
  5. In a separate bowl, beat the heavy cream until it forms stiff peaks.
  6. In another bowl, beat the mascarpone cheese until it is smooth.
  7. Gently fold the mascarpone cheese into the egg yolk mixture, and then fold in the whipped cream until everything is combined.
  8. If using, add the Marsala wine to the mixture and stir until well combined.

Assembly Instructions:

  1. In a shallow dish, mix together the brewed espresso and coffee liqueur.
  2. Dip each ladyfinger into the espresso mixture for a few seconds, making sure to coat both sides.
  3. Place the soaked ladyfingers in a single layer in the bottom of a 9×13 inch baking dish.
  4. Spread half of the mascarpone filling over the ladyfingers.
  5. Repeat with another layer of soaked ladyfingers and the remaining mascarpone filling.
  6. Cover the baking dish with plastic wrap and chill in the refrigerator for at least 6 hours, or overnight.
  7. Before serving, dust the top of the tiramisu with cocoa powder.
